Refresh yourself with some healthy Moroccan Mint Tea

Tea-se your taste buds 

Morocco’s popular Mint Tea, symbolic of not only its cuisine but event its culture, has become a favourite of many. Served throughout the day and particularly at meal times, this refreshing drink is often prepared by the male head of the family.

The tea, also referred to as Maghrebi; meaning sunshine and indicating the north-west African region (Maghreb) is poured from a height in order to aerate the drink and lend it some froth.

To prepare this tea, you will need:

  1. A handful of fresh mint
  2. 5 tablespoons of Green Tea
  3. 3 tablespoons of sugar, or as per taste
  4. 5 cups of boiling water
  5. Moroccan Tea Pot/Tea Pot
  6. Small glasses (for an authentic Moroccan feel)

 Method:

  1. Put the green tea in a teapot. Add 1 cup boiling water to it and gently swirl around. Pour this ‘spirit’ into a glass and set it aside. The spirit contains the flavour of the initial infusion and will be used later to add to the final infusion.
  2. Add another cup of boiling water to the teapot and swirl around. Pour it into a glass and drain it. This is done to reduce the bitterness.
  3. Add a bunch of mint leaves to the pot with sugar as needed. Moroccan tea is usually sweet as it is served after a meal.
  4. Pour 3 cups of boiling water into the pot. The pot may further be heated to lend the fusion the perfect flavour.
  5. After 3-4 minutes, serve the tea. This could be put back in the pot to thoroughly mix the flavours. Repeat if needed.
  6. Voila, you have your own Maghrebi Tea ready!

In tradition, the tea is served thrice. This popular Maghrebi proverb sums it up:

The first glass is as gentle as life,
the second glass is as strong as love,
the third glass is as bitter as death.
